I have some documents of converted monsters etc that I think are available at dnd.starflung.com, but im not quite sure. Specifically for your question of Clerics and their Spheres, GURPS religion might be very useful for you. I rarely use clerics in my campaign and have changed back and forth between different systems, but one way of doing it is to say that each Sphere of Power is associated with certain Schools of Magic and let the clerics gain spells from those schools only. You might also allow certain spells such as turn undead and minor healing to be available to all clerics. My main problem with GURPS is that the combat system is too clunky. I use only basic combat rules but with the advanced dice mechanic (see how much you beat the target number with). However, the pcs now have plate armor and high dex and str scores which makes the game very unstable IMO. Im seriously considering converting my campaign into the Masterbook system which allows for greater variations in power levels. You can just as easily make your own. Im not sure if that Dragon mag someone else mentioned actually had a map of the fort or whether it was just the town around it that was on the map. Btw, am I the only one who thinks the picture of Ft Doom from Karameikos, Kingdom of Adventure looks really silly? The one with the big skull-gate? The reaction among the players ran from indifference to nervous apprehension. In the context of thinking about Masters of the Universe, it is silly. But in the context of that adventure and the campaign upt to that point, it worked pretty well. You can just as easily make your own. The maps have some dungeons + caven systems below fort doom and the plans for a walled area adjacent to fort doom but nothing on fort doom itself.
