If we continue to play I'm probably heading for the Northern Reaches. My current problem with the setting itself is that it concentrates _loads_ of cultures in a very small place called the Known world, while the rest is either occupied by large cultures (Alphatia, Sind, Jennite Holdings) or not detailed at all. That's probably the best option, since I never worked out a background for him when I created the character. For what it's worth, I saw him as being from Heldann itself, the son of Hattian immigrants (and not from Hattias), and not from Freiburg. Altendorf, Thurgau, or Hockstein are probably good choices for hometowns, as Grauenberg is more of a frontier settlement, and other settlements are either too small or too remote. He's definitely from the heartland. I see his family background as being somewhat modest - he's fairly plain spoken and doesn't tend to put on airs - but he probably entered the order as soon as he could, as a means of seeing the world. I would defintely say he has extensive combat experience, and his life was probably saved a number of times, so he's defintely a believer (but probably not a foaming-at-the-mouth fanatic - "pious" would be a good descriptor).
