Continueing story...

I have read the war of souls trilogy... wasnt too interested in the minotaur trilogy. So what would be the next one to read that leaves off from after the war of souls...? From reading the forum i have heard the Anvil and iron (think thats book two but not sure) so lets say the Anvil trilogy. than there's talk about the wizard conclave is a continuation... So again, what book picks up after Vanished moon...?

The Dark Disciple Trilogy by Margaret Weis (there are two books out at the moment Amber & Ashes and Amber & Iron). They pick up with Mina where WoS (War of Souls) left off.

Wizard's Conclave is a stand alone book that tells about the re-beginning of Wizardry post-WoS

Yes, they are both post-WoS.

No, Wizard's Conclave doesn't have anything to do with DD. WC moves the timeline slightly forward for wizards only.

WC does come before the Rise of Solamnia Trilogy (Lord of the Rose - currently out and The Crown and The Sword - coming out in June). LotRose is a good book, and it is a timeline advancing trilogy, but it is not a necessary read if you are sticking to the "core books". RoS can be read after DD.

While the Wizard's Conclave novel doesn't directly relate to the Dark Disciple series they do tie in more than you think. If you hadn't read the novel you may not grasp why Jenna, who is magically and physically weaker than Dalamar, is now Head of the Conclave of Wizardry. Also you wouldn't have a clue who Coryn, the Mistress of the Order of the White Robes, is and what she was doing there. I would also suggest reading it before Amber and Ashes because of the large role the Order of the Black Robes, Nuitari, and the Tower of the Blood Sea seem to be playing in the Dark Disciple trilogy. The Orders of High Sorcery are the oldest and most influential institutions on Krynn. More often than any other existing organization they have shaped the history of Ansalon. Even more so than the Knights of Solamnia.
