What's the rule of thumb on this? All material before a certain date is no longer useable? All material that hasn't been revised for 3.5 is still useable, maybe? Does anyone know/know where I can find out?

Probably, on the 3e boards -- 3e is definitely not Out of Print enough for us here ;)

Most 3.0 stuff can still be used in 3.5 with minor adjustments; the prime example of this is Monster Manual II.  It mainly depends on the DM too, but the only 3.0 materials which I would say have been "replaced" were a few of the splatbooks.  Sword And Fist and the other various books which had additional info for the various classes; they were replaced by the "complete" books: Complete Warrior, Complete Arcane, Complete Divine, and Complete Adventurer.  Like I said though, you're free to use any 3.0 stuff that you want, and it normally only requires minor adjustments.  If you go to the downloads section of the website, most of the books which needs updates have free downloadable supplements to make them easier to convert.
