Most 3.0 stuff can still be used in 3.5 with minor adjustments; the prime example of this is Monster Manual II. It mainly depends on the DM too, but the only 3.0 materials which I would say have been "replaced" were a few of the splatbooks. Sword And Fist and the other various books which had additional info for the various classes; they were replaced by the "complete" books: Complete Warrior, Complete Arcane, Complete Divine, and Complete Adventurer. Like I said though, you're free to use any 3.0 stuff that you want, and it normally only requires minor adjustments.
