It shouldn't be all that hard to adapt, I would think.

I don't have Rappan Athuk with me, but I'll di through my memory for the upper levels, at least.

In the history, a group of Solamnic Knights would fit well in place of the Paladins and other holy warriors who fought at the site.

To make the lich really dangerous, you would have to make sure the adventure was not set during the early Age of Mortals, before the return of the gods...

You would have to change the wererats to a comparable CR monster. (Krynn has no lycanthropes.)

Stuff like that....as a side note, I don't know if you have run or been through Rappan Athuk, but the guys putting it together had absoutely no concept of CR or progressive difficulty. A group of characters having the recommended levels would get slaughtered by the gargoyles before they even entered, or, if by some miracle they bypassed the gargoyles, they would easily (and boringly) trounce most everything on the first level. So, the module needs adaptation even before setting it in a specific world.

-------
I'm not familiar with the Witchfire trilogy, someone else would have to chime in, there.
