Does anyone know any source material for the islands of Enstar and Nostar?

The closest thing I know of would be the Dhamon novel Redemption, where Dhamon and crew spend some time on one of the islands and get to meet the unusual inhabitants thereon.

I always thought they were on one of those two islands...but I'm not sure it ever specifically says if that is where they are.

Also, the really funny woodhen story from the History of Dragonlance explores a lot of the islands around sancrist and ergoth.

What was unusual about the inhabitants? What a shame there's no more.

They were unusual because of their nightly visitations of shadow wights.

Page 105 of Redemption states:

"They call this dismal patch of dirt Nostar. A big island, as far as islands go, but a pretty big nothing as far as I'm concerned. Ragh walked between Dhamon and Fiona, a battered map held between his clawed hands."

So they are definitely on one of the islands.
