I was looking at the DragonLance campain book the other day and I saw that the Knights of the Crown and Rose get D10 for their hit die, but the Knight of the Sword gets a D8. Why is this?

Probably because when they read that the Knights of the Sword are like clerics, they just copied the clerics whole class into the Knight of the Sword. And then added Smite Evil and Soul of the Knighthood or whatever. In my games I give the Knights of the Sword a d10, it makes sense to me. Basically the Knight of the Sword is just a cleric

It represents a different focus in the orders. The Crown order is focused upon battle almost entirely.....whereas the Sword order focuses more on the clerical aspect of the Knighthood. The Rose order goes back to the d10 likely because the focus shifts to both aspects equally.
