For magical weapons with the burst ability, it states that the weapon deals extra damage "on a successful critical hit". How does that work with constructs, plants, undead etc. which are "not subject to critical hits"? Does the burst effect simply not take place, or do you still roll to confirm threats, even though the crit. will have no other effect?

Yes, you roll to confirm the critical threat as usual. The weapon itself deals normal damage but the burst quality activates and does the additional listed damage. This was confirmed in Sage Advice.
