For instance I just read the sustenance power and was wondering if anyone would restrict a power like this?
, there are number of ways to get around the normal issues of food and water and keeping cool. The is the Ring of Sustance in the DMG, Clerics of 5th level and higher can cast Create Food and Water easily covering the entire party, Their are multiple low level spells that I've seen that provide succor from the sun's harsh rays, and the Converted Ring of Cooling (it was originally in the Psionic Artifacts of Athas book). More than psionic powers, I think there are certain Magic items that I just wouldn't allow. For instance, a Decanter of Endless Water would be a one of a kind Artifact on Athas rather than just a simple magic item if it even exsisted.Personally I would eliminate Astral Traveler and Astral Caravan, or possibly replace them with similar powers that allow for travel through the Grey. The name of the power Elfsight is a little inappropriate, but the ability it grants isn't, so you could change the name for that maybe.
I know this might seem really extreme to most people on the boards, but I personally think that the entire Discpline of Metacreativity is crap. I don't allow it at all, any of it. I think having the ability to conjure up things from thin air is the province of Wizards and Clerics, not psions. Its one of the things that seperates magic from psionics. Besides, it seems like they just included it in the 3rd ed. rules to make psionics more similar to magic (Wiz Boy 1:"We can just say it made out of ectoplasm!" Wiz Boy 2:*Blinks* "What's ectoplasm?" Wiz Boy 1:"You know ectoplasm!" *wink* "That way we can just take a whole bunch of wizard spells make a few changes and we have a new discipline of Psionics to replace Metapsionics from the old system" Wiz Boy 2:"Oh good idea, lets call it Metacreativity to make it sound vaguely like the old Discpline we're replacing").
Of course my veiws on the discipline are not setting specific, I would feel the same way about the use of psionics in an other setting too. Unless maybe the whole ectoplasm thing was somehow validated by the setting.

Change the material. So, ectoplasm is a load of malarky, but maybe Athasian psions pull on the the stuff of the grey, or the black, to shape. Not the truly toxic stuff, but the more "inert" material. (Ie, no grey based side effects to the powers ....)
